Deba Fish Butchery Knife 165-210mm

A deba is the knife for whole fish. The thick, heavy, single-bevel blade cuts through heads and small bones, then fillets cleanly along the spine.

About Deba

It is a specialist knife, so pair it with a santoku or a gyuto for everything else. Ours run from 120 to 150mm, which covers mackerel, sea bream and most market fish.

The blades are White Steel #2 and Blue Steel #2, both carbon steels, so wipe and dry them after every use. Every knife is made in Japan.

Fish butchering specialist — head removal, filleting, portioning.
Thick spine, single bevel; breaks down whole fish without crushing the flesh.

WHY CHOOSE THE DEBA

出刃 ⎯ DEBA ⎯ FISH BUTCHERY KNIFE

Overview

The deba is a fish butchering knife — thick spine, single bevel, designed to handle the full breakdown of a whole fish. Head removal, filleting, portioning: the deba does it in sequence. Not a multi-purpose kitchen knife. A specialist tool built for a specific job and nothing else.

Fish butchering

The primary job of a deba is to break down whole fish — cleanly, efficiently, without crushing the flesh. The geometry, weight, and bevel are all oriented around this task. A proper deba in the right hands handles an entire fish faster and cleaner than any general knife.

Heavy spine

The deba's thick spine concentrates weight forward and provides the mass needed to cut through fish spine and small bones without the blade twisting or deflecting. Heft is a feature here, not a compromise.

Traditional Japanese

A foundational tool in Japanese kitchen tradition — purpose-built, unchanged in its core geometry, designed around the demands of Japanese cooking culture. It has served the same function for generations for a reason.

Single bevel

Ground on one side only. The flat back provides a reference surface and directional control; the bevel side creates extreme cutting acuity. Single-bevel geometry achieves a level of sharpness and separation that double-bevel knives can't match.
